Danish butter cookies

Danish Butter Cookies
That day while looking around for more CNY cookies ideas, I accidentally stumbled upon this recipe here. It makes me all excited as I love anything to do with butter. Be it butter cookies, butter cake, butter butter as in spread only....love it to bits! 

And I used to put few cubes of butter on the bread roll and it tasted heavenly. For those who know this Kjeldsens Butter Cookies, it is orginally from Denmark and has mark its presence for as long as I can remember, probably during my childhood. It is so-called the premium cookies that we can get hold of before the Famous Amos came into picture. And what attracted me to try is the throw-all-in the mixing bowl and its ready to be baked. Fantastic isn't it!

Here's my attempt in making the Danish Butter Cookies with additional little helper.


Ingredients:
  1. 1 Egg, lightly beaten    (60g)
  2. 200g Soft butter           (7/8 cup) - use Lurpark for more authentic Danish feel
  3. 320g Plain flour, sifted (2 & 3/4 cup)
  4. 100g brown sugar         (1 cup) - Original recipe called for 130g icing sugar, sifted
  5. 2 tbsp Vanilla extract
Method:
  1. Place everything in a mixing bowl and mix evenly on the lowest speed possible.
  2. Pipe wreaths onto greased baking tray using an open star tip. Since I don't have the pipe, I just roll it into small balls and pressed with the fork. Most of the recipes will use pipe tip 195 or Wilton 1M. Tell me about it, I got no idea what is that LOL!
  3. Bake in a preheated oven at 200 degree celcius for 15 mins. Original recipe is 7-8 minutes. Depending on oven and the shape and thickness of the dough maybe. 
  4. Leave to cool slightly before removing from the baking tray.
  5. Transfer cookies into airtight container after cookies are at room temperature.
